Makes approx 50 meatballs

INGREDIENTS:

Meatballs:
Ground Beef (1 package approx. 5lbs), thawed
1 onion, diced finely
½ green pepper, diced finely
½ yellow pepper, diced finely
½ red pepper, diced finely
2 cloves garlic, grated
Ginger, grated (approximately 1 chunk the size of ½ thumb – to taste)
1/8 cup fresh parsley, minced
1 tsp (dried) parsley
1 tsp oregano
1 tsp basil
½ tsp rosemary
½ tsp Italian seasoning
1/16 (approx) fresh mint, diced
4 tbsp ground flax seed

Sauce:
1 cup (approx) grape jelly
2 tsp tumeric
½ tsp curcumin
1 tsp Dijon mustard
2 tbsp apple cider vinegar
1/8 cup water
~1 tsp grated ginger

METHOD:

Meatballs:
Finely dice onion, peppers, fresh parsley and fresh mint (if desired).
Add to bowl with ground beef

Add in garlic, ginger and herbs

Mix ground meat, vegetables and herbs together using hands
Add in flax seed
Shape into small balls by hand

Cook in oven at 425F for 10 minutes
Remove from oven and add to slowcooker

Sauce:
Combine grape jelly, tumeric, curcumin, Dijon mustard, apple cider vinegar, water and ginger.
Mix well and pour into slow cooker over meatballs
Place lid on slowcooker, and cook on high for at least 3 hours, stirring occasionally
